Certified Food Service Educator (CFSE)

Purpose: The purpose of the CFSE is to document teaching skills geared for the culinary arts and hospitality educator of secondary and post-secondary levels; and to give national recognition to the individual for that standing of excellence. It is desired for personal merit, peer recognition, and job classification and promotion. It is not designed to certify whether or not you are knowledgeable about the content area of the classes you teach. The CFSE is designed to certify that you have fundamental knowledge on how to improve the quality of your teaching and ultimately student learning. It is offered exclusively to FELC members.

The CFSE program is approved by the American Culinary Federation. Upon completion of the CFSE certification, members can receive 64 Continuing Education Hours (CEH’s) from the American Culinary Federation, the highest number of hours attributed to any ACF approved program.

Objective:
To establish and guarantee minimum skill levels of educators commensurate with current industry demand through a process that realistically and reliably tests competencies, so that training programs may be assured of hiring qualified and enthusiastic teachers.
To foster a "pathway to excellence" among culinary and hospitality educators by providing regular access to training in cutting-edge skills and innovations in education delivery, to enable them to excel as teachers in a growing and ever-evolving industry. Further, through this process, to mandate regular and ongoing continuing education so that certified educators may always be considered the top in their field.
To forge a network of culinary professionals who freely share their knowledge to make the role of educator more rewarding and enjoyable for all.

The Program
Foodservice Educators Learning Community will provide the course materials and work book needed to complete the Certified Food Service Educator Certification. This can be accessed on line. Students will be required to purchase the book: Teaching Tips, by Wilbert J. McKeachie and Maria Svinicki, ISBN# 0618515569 The program provides 40 hours of course work. Upon completion of the course materials the student will be required to take a written exam and pass with a 75% or better. At that point in time a paper certificate will be sent to the student for their course work. In order to receive CFE Certification the student must produce a teaching video that demonstrates mastery of key course competencies that can be evaluated through our teaching rubric that will be assessed by our advisory committee.

Steps to Earning the CFSE Designation

  1. Qualifications
    Meet the necessary CFSE program requirements listed below in Certified Foodservice Educator Minimum Requirements.

  2. Application & Tuition:
    Registration information is found at the bottom of this page to register for the course on-line. Cost for the program is $499 for members of FELC.

  3. Recommendation and supplemental materials
    Please have academic administrator complete and submit the attached CFSE recommendation form and send it to FELC c/o Michael Carmel, Culinary Education Director.

  4. Taking the course
    The course is designed to be take in 8 weeks. The course can be finished in less time or more time based on the amount of work put into the course at any one time.

  5. Course Assesement
    Practical written assignments will be given after each module. Upon completing all of the assignments and the course materials a final exam will be generated. All of the assignments and the final exam can be turned in on-line through the program. There is no time limit for any of these items. Assignments and final exam will be assessed on a pass fail basis with passing judged at 75%. Upon completion of all of these items a certificate for course completion will be sent to the student.

  6. Practical Examination
    In order to receive the CFSE designation a DVD or video demonstrating your teaching proficiency must be turned in to FELC. The DVD or video should show a 45-60 minute un -cut presentation that you have given in a live classroom. It should show all of the major educational rubrics as discussed in the program. The video should show both lecture and lab components.

  7. CFSE Recognition
    Upon receiving a copy of your completed course materials, the final exam, the video, and a processing fee of $100, the FELC Certification Committee will review everything. It will take approximately 2 weeks for the committee to review all of your materials. Once reviewed and accepted you will receive a certificate plaque in the mail validating your Food Service Educator Certification.

  8. Should your video, incompletion of any of the materials, or failure of the exam warrant your denial for certification, an explanation will be sent to you through the mail. If the exam or the video needs to be re-taken or re-done, the candidate can do so at no extra charge. You will have up to another 3 months to complete or finish any portion of the exam or course materials.

  9. Re-Certification
    Your CFE Certification expires after 5 years. In order to maintain this level of certification it must be renewed at the end of this time period. In order to do so an application must be submitted and proof of a minimum of 12 continuing education hours must accompany the application. Continuing education hours can be completed through FELC either on-line or at our annual summit. The cost for renewal is $150.


Certified Foodservice Educator Minimum Requirements
In order to apply for the CFE Certification an educator must have a minimum of three (3) of the following qualifications. Please send documentation to support each checked item.

  1. 2 year culinary degree or apprenticeship certification from an approved institution with a minimum of 30 contact hours in nutrition, sanitation and management (all three must have been updated with the last 5 years).
  2. A Baccalaureate or Master’s degree from an approved institution with a major in culinary, hospitality or related field of studies.
  3. Is employed full time as a culinary, hospitality, or foodservice instructor in a secondary or post-secondary school.
  4. Has a minimum of two years experience as a culinary, hospitality, or foodservice instructor either part-time or full-time.
  5. Has at least 5 years professional experience in the foodservice industry with a minimum of two years managerial or supervisory experience.
  6. Has completed a minimum of 400 hours of community or school foodservice events that require some form of cooking, serving, or management.
